Various drinkable poisons would be fun to add. Various DCs for detection (pending on the poison), save checks, and results could all be built into these potions. They could be disguised as ales and other normal drinks, but sold at Shady and Eboncoin stores. I'm sure there are ample poison rules already in 3.5 for what the results could be (knockout juice, truth serum, etc.).

Another idea could be something similar, but usable on an opponent with 2% or less HPs. Forcing stuff down a disabled opponent's throat, and whatnot.

I'm sure Black guards would love to have poisons made useful. Just for giggles I threw some "strong poison" on a weapon during PvP. Took two steps forward and it wore off. Has no use whatsoever that I could see. Extend the time and boost the DC and poison might make a BG almost a threat to the good guys.

The highest save i got on my level 22 character is like 2O, and thats with save bonus items. And if poison procs every hit, that should have a good chance to poison even if they have high saves(if you can beat their ac, it at least 5% chance each hit).
Back to topic, i don't think drinkable poison is that good of an idea. I used to play a game called ultima online, and in that game you can posion drinks and food. Characters needed to eat and drink to perform well, but still ppl didnt eat or drink potentially poisonous things from ppl. In a game where characters dont need to eat to survive, knowing that drinks and food can poison you, ppl will just refuse the food/drink and just buy their own. Could be interesting with healing potions and other magical ones (barkskin e.t.c.). Like Handsomeman said regular food and drink will just be ignored if poison is introduced.
