In DnD/NWN2 dispel magic works in the following way: You roll a d20 and add your caster level, up to the maximum bonus stated in each spell, against 11 + the spell's caster level, against every spell on the creature.
Lesser Dispel caps at +5
Dispel Magic caps at +10
Greater Dispel caps at +15 (or +20 in PnP)
Disjunction has no cap.
The problem with this is that at as the caps are reached the spells become more and more useless against foes that are within the same power range as you. I'd like to suggest that the dispel series are scrapped and replaced with their Pathfinder variations.
In Pathfinder, Dispel checks work the same way as in DnD except that none of the Dispel Magic spells cap your caster level bonuses, instead you roll against the highest level spell on a target, then the next highest and so on, until you successfully dispel a single spell, at which point the spell ends. The more powerful Dispels allow you to strip more spells at once.

Greater Dispel: You can strip one spell per four caster levels you possess.
Disjunction: Functions as per DnD, stripping all spells.
