The main course is a somewhat healthy variation on orange chicken that is easy to make and very flavorful. It's pretty inexpensive to make, and left overs last a while. By all means use this recipe if you're interested, but please give credit where credit is due. If this is popular, I may post recipes on a regular basis.

Orange Chicken
Ingredients
1.) Begin by preheating your oven to ~350 degrees F.
2.) Thaw, cut, clean, and dry your chicken breasts.
3.) Cut 1 whole white onion into thin slices and add to the baking dish
4.) Cut 2 oranges into thin slices, and then quarter into triangles. Deseed and add to the baking dish.
5.) Add the entire jar of orange marmalade to the baking dish.
6.) Add about one cup of white wine to the baking dish.
7.) Add a small amount of corn starch to help thicken the sauce.
8.) Mix the onion, oranges, orangle marmalade, white wine, and corn starch.
9.) Salt and pepper the chicken breasts, and place them in the large baking dish. The sauce should nearly cover the chicken breasts.
10.) Cook for 40 minutes.
11.) Plate. Spoon the thickened, reduced orange sauce over the chicken and serve.
I recommend you serve it with wild rice (mixed with the orange sauce) and buttered and spiced (garlic, oregano, Italian breadcrumbs) multi-colored greenbeans.
